Here is a link to a blog post from a guy who, like me, was plagued by the “Restart Now” dialog from Windows Update.
He outlines a method that unfortunately doesn’t remove the nag, but does allow you to turn down the irritation level somewhat.

I’ve set mine to nag every 1440 minutes which is much more reasonable than the default of every 10 minutes.

While you’re in that window that the guy mentions, you might also take a look at the setting called “No auto-restart for scheduled Automatic Updates installations”. The help text says, “Specifies that to complete a scheduled installation, Automatic Updates will wait for the computer to be restarted by any user who is logged on, instead of causing the computer to restart automatically.”
